This classic 4 ingredient recipe brings together simple ingredients to create a rich, fruit-filled loaf that's as lovely for a quiet afternoon treat as it is for sharing with friends.

Ingredients:

1 Cup of strong black tea (250mls) when hot

1 Cup of Sultanas (130 grams)

½ Cup of Sugar (120 grams)

2 Cups of Self Raising Flour (270 grams)

  • Make a cup of strong black tea, (leaving tea bag in for a minimum of 5 minutes).
  • In a bowl put the Sugar and Sultanas (currants / raisins work also), pour in the tea and stir.
  • Leave for a minimum of 2 hours (overnight is best)
  • Preheat the oven to 180 degrees.
  • Line a loaf tray with baking paper.
  • Add the flour to the tea mixture, you will need to use a wooden spoon and stir, it will go very thick.
  • Scoop the mixture into the loaf tin.
  • Pop in the pre warmed oven for about 30 minutes, check with a knife, should come out clean.
  • Once cooked remove from the oven, turn the loaf out and enjoy hot or cold with a nice cuppa.

Enjoy,
